Ingredients
The ingredients are fairly easy to obtain:
(i) Stuffing
brown basmati rice - 2 handfuls
large onion, chopped
large carrot, diced
100g mixed nuts
3 Quorn fillets, chopped
oregano
thyme
(ii) Sauce
jar of passata/chopped tomatoes
1 teaspoon chilli powder
1 teaspoon cumin
1 teaspoon ayenne
1 teaspoon paprika
1 teaspoon cinnamon
cheese to garnish
Step 1
Boil rice until cooked but chewy.
Step 2
Fry onion in oil for 5 mins.
Add carrot and continue cooking.
Add a pinch of oregano and thyme. Add Quorn pieces, mixed nuts and cooked rice.
Step 3
Carefully peel leaves from Savoy cabbage. Remove any tough stalk.
Blanch leaves in a bowl of water for 5 mins, then remove and dry.
Step 4
Place a spoonful of stuffing onto each leaf and fold over to make a
parcel.
Place in an ovenproof dish and repeat until leaves/stuffing used up.
Step 5
Mix tomatoes/passata with rest of sauce ingredients. Pour over cabbage.
Top with grated cheese and cook for 20 mins (gas mark 4).
