Curry

This curry is easy to make and does not take too long to prepare.


Ingredients

The ingredients are fairly easy to obtain:

  1. 4 tablespoons vegetable oil

  2. 2 large onions, coarsely chopped

  3. 3 cloves

  4. 6 green cardamoms, bruised

  5. Crushed/fresh chilli*

  6. 2.5 cm/1 inch fresh ginger, grated

  7. 4 cloves garlic, sliced

  8. 2 teaspoons ground coriander

  9. 1 teaspoon ground turmeric

  10. 6 fillets Quorn

  11. A handful of mushrooms, chopped coarsely

  12. Hot water

The curry can be eaten with naan, chappatis or rice.

*Add chilli relative to taste.


Step 1

Heat the oil in a pan and add the onion, cloves and cardamoms.

Fry until the onions are golden brown.


Step 2

Add the chillies, ginger, garlic, coriander, turmeric, Quorn and mushrooms.

Pour enough boiling water into the pan to cover all the ingredients.
 

Step 3

Simmer
the curry on a high heat until most of the water has evaporated.
Stir the pan regularly in order to mix the ingredients well.
Use a spoon to break up the Quorn as it cooks.

The boiling-off period can take quite a while. The end product should be fairly dry.


Alternative

An alternate recipe involves the addition of sweet potatoes at step 2.
